Easy roasted delicata squash recipe below! 🍽️

This is my favorite fall/winter squash because it’s incredibly easy to prepare. You don’t even need to peel the skin (it’s thin enough eat and delicious!) As a bonus, they are so affordable, high in fiber, potassium, and vitamin C, and also contains vitamin A, lutein, and folate.

Delicata has a nutty, buttery, and slightly sweet flavor that reminds me of a cross between butternut squash and sweet potato.

Some like to prepare it with cinnamon, brown sugar or maple syrup for a sweeter take, while others use toppings like Parmesan or cayenne for savory options. Below is an easy recipe that can be adapted to whatever spices you desire

• Preheat the oven to 400ºF. Cut the ends off the delicata squash, then slice it open length-wise. 
• Use a spoon to scrape out the seeds, then slice the squash into ½-inch wide slices. 
• Place the sliced squash on a lined baking sheet. Drizzle with olive oil, then sprinkle spices of choice.

• Toss the squash until it is fully coated in oil and spices. Make sure it is spread out over the baking sheet in an even layer. 
• Transfer the baking sheet to the oven and roast for 20 minutes. After 20 minutes, flip the squash pieces over. Roast for an additional 10-15* minutes, or until browned to your liking. 
• Taste the squash and adjust the salt or pepper to your liking.

It’s usually a red flag, not because curiosity is bad (it’s great!), but because real research takes training, context, and critical thinking.

Nutrition science is complex. Studies differ in design, population, and quality, and one small study rarely outweighs decades of established evidence.

Reading a headline or abstract isn’t the same as understanding study methods, limitations, or bias. It is also not the same as conducting a well controlled real life human research study!

Dietitians are trained to interpret research, translate findings into real-life guidance, and help you make informed decisions that actually support your health.

So keep asking questions, just make sure you’re getting answers from someone who knows how to read the science. 🧠💬 Share with someone who needs to hear this!

“Once fear takes hold, many people stop seeking truth. Rather they crave control and reassurance that their worldview is correct. That’s why misinformation thrives in emotional spaces, particularly those riddled with fear.

In that context, an external threat and misinformation fills that vacuum by offering faux control: ‘If you just avoid ___ then ___’

It says ‘you’re in charge. You’re smarter than them. You don’t need experts,’ all while actively disempowering people by selling them fake fixes.

Sell fear, then sell a solution.’

Misinformation in pseudoscience disguises itself as a means of empowerment, but what is helpful is to recognize how we can use that insight to tailor communication; people want to see themselves as active participants in the decision making process. That feels empowering.

That is why apps that monitor aspects of one’s health, even without clinical data or without measuring meaningful outcomes are so popular; they bestow a sense of agency and a feeling of control. That’s why food ingredients are prime for misinformation.

Show people how to spot flawed studies. Explain confounders or how science evolves. Make them participants, not passive listeners. THAT builds trust, it shifts the frame from compliance to collaboration.

Teach people why guidelines exist and why they shift. Why consensus changes. That’s empowering. Point out how wellness is misleading and disempowering. Nothing is more disempowering than choosing fear or facts.
